The Roswell City Council on March 15 awarded a popular local eatery a lease to operate a restaurant and bar at the Roswell International Air Center. The Council approved the lease with Pecos Flavors Winery.
The city believes the addition of the food and drink offerings at the city’s air center terminal will increase the value and benefit of the air center to those who use it, as well as contribute to the gradual growth of amenities at the air center that will ensure the long-term stability of these new offerings and others that may develop in the future.
The proposed initial two-year lease calls for the restaurant and bar to occupy about 1,685 square feet of space in the terminal. An existing kitchen and dining area that has not been in use for some time will get some renovations as the area is prepared for the new restaurant and bar. As part of the lease, the city will provide the needed liquor license that Pecos Flavors Winery will also lease.
The start date of the lease is still to be determined, but Pecos Flavors Winery will have access to the area to be leased beginning April 1 in order to begin remodeling and otherwise preparing for business. Once in operation, the restaurant and bar will keep normal business hours and operate at least six days a week.
The city originally put out a request for proposals from entities interested in operating a restaurant and bar in the air center terminal. However, the city received no proposals that met the standards of what was required by the request for proposals. The city then entered into negotiations with Pecos Flavors Winery, resulting in the current proposed lease
